The Moliterno pecorino canestrato cheese Pgi (Protected Geaographical Indication) is a cheese produced with milk of sheep and goat reared prevalently at brado pasture. For his production, the cagliata is pressed in fuscelle (from the Canestrato name) of which it remains the sign on the scab after the cheese has been seasonned.
The seasonned exclusively happens in Fondaco and treaty with olive oil and wine vinegar.
