Ecotype of dwarf Borlotto with a round-ovoid, not very big seed, with a creamy white-coloured ground and wine-coloured mottles. This ecotype is the most famous and maybe the most ancient one: it is really appreciated for its nearly absent after cooking peel. It redeems itself from its name “Ciuto” the italian “Cretino” (Stupid) for its usage in cooking, where it becomes a food “Regina” (Queen) for the several possible utilizations and for the excellent qualities of flavour and cooking. It is, in fact, a real superior Borlotto, usable in many tasty recipes
It is suggested as a unique dish with pasta or alone as a side-dish.
