The riso tondino white bean of Sarconi PGI (Protected Geaographical Indication) is a ecotype of dwarf bean with the characteristic not very big, round-ovoid and uniform white seed. It is one of the best variety both for production and for its organoleptic qualities (flavour and appearance); it is fast to cook, with a very tender and totally absent after cooking peel.
The chef can cook it in every way he wants, but he can make it unique mixing it with mussels and short, handmade pasta.
Store in a cool, dry place. Shelf life: 12 months.
