Il Sigillo is a D.O.C. wine obtained from Aglianico del Vulture grapes from a single historic vineyard, located on the Contrada Cerentino hillside in the village of Maschito.
It is a modern interpretation of an Aglianico style wine as produced in this area in the past. The grapes are harvested fully over-ripened towards the end of November, and undergo a long maceration, lasting about a month. Sugar content, due to the higher concentration of the fruit, is relatively high and is not completely fermented into alcohol, the residue offering a delicate touch of sweetness, as is also permitted by local production laws. The wine lies in new barriques for 12 months and in third passage barriques for a further 12 months, before bottle aging.
The product is remarkably concentrated though elegant at the same time, with a bouquet of blackberry, black cherry and blackcurrant. To the palate it is smooth and powerful, with an eternal finish of liquorice and dark chocolate.
Excellent with roasts, but also dessert made of melted cocoa.
