The white quality sparkling wine La Stipula is obtained from classical method vinification in white of Aglianico del Vulture grapes.
The grapes are harvested in the second fortnight of September; they are trodden in a soft and delicate way and the fermentation process of the most takes place in some new french oak barriques for about two months, slowly.
The entire spumante cycle, then, takes place in the bottle for about thirteen months in the aging cellars – a series of natural volcanic tufo grottoes.
So, the obtained sparkling wine has got an intense pale yellow colour, with some elegant golden reflexes. In the flute glass you can note its hight and soft froth, with an intense, delicate and a very persistent perlage. To the nose it is fragrant and it reveals delicate inklings of white flowers, novel bread crust and yeast.To the palate it is intense, fresh and well balanced, with inklings of ripe yellow fruit and with some pleasant vanilla notes.
